The fish that are landed at the quayside are of the highest quality, thanks to the approach of our fishing partners to trawling and onboard refrigeration. From here, our fish are pumped into our factory and graded.
As they enter our factory - and throughout processing - the fish are tracked through our quality control system. Combined with the data received from the fishing vessels, we can continue to easily identify and trace the origins of our fish.
Our purpose-built processing plants have been designed for efficient pelagic fish processing. Our method of processing helps us maintain our fish at a consistently chilled temperature, a vital element of our strict quality control standards. It also enables a quicker turnaround for our customers.
Because of the size and versatility of our operations, we are flexible to our customers' specifications. We supply a wide range of mackerel and herring products, including:
Once processed, our products are packed and can be dispatched fresh or sent for freezing and storing.
Having meticulously controlled the temperature of the fish throughout processing, we pack our processed fish into 20kg cartons before transferring it to blast freezers for rapid freezing.
Blast freezing is achieved by circulating frozen air in the freezing room. By rapidly freezing our fish products in this way, we preserve the quality that we and our fishing partners have worked diligently to maintain during catching and processing. After 18 hours, the cartons are ready to be packed into pallets.
Palletised cartons are placed in our fully racked cold storage, ready for delivery. We have a large capacity cold store, which is available at certain times of the year for third party storage lease.
Our digitised stock control system enables full traceability throughout the distribution process. We supply all required documentation to allow onward movement of goods to their final destination.
We own and operate a range of vehicles to best suit the fish product being transported, as well as the facilities to load trucks, containers and reefer vessels directly at our factory. Goods supplied to the UK and European markets are transported by our own refrigerated fleet directly to our customers. These vehicles are also available for third party transport throughout the UK and Europe.
Our fish products are exported globally and are particularly popular in Europe and Asia Pacific. To ensure a smooth transit from Peterhead, we have strong relationships with pelagic fish distribution hubs in The Netherlands, Latvia, Lithuania, Poland and Romania. Accessing these established European hubs supports fast delivery to our customers worldwide without any degradation of the quality of our fish products.
An essential part of our quality control methodology, laboratory testing is strictly adhered to and is managed through our HACCP food safety management system.
Samples from every product batch are tested in our on-site laboratory to ensure the safety, freshness and quality of our fish products.
Rigorous testing to ensure our fish products are safe to consume is carried out by Express Micro Science, an accredited laboratory that tests microbiological and chemical analysis for quality control purposes. Samples from each production code are tested to rule out the following:
